Sweet & Sticky Fig Salmon

ingredients

8 oz. fresh figs (remove the stem and quarter each fig)
1/3 c. orange juice
1/4 c. Kikkoman Soy Sauce
1/4 c. honey
1 tsp fresh grated ginger
1/4 tsp orange zest
2 green onions, sliced
2 cloves garlic, minced
1 full salmon filet
1 orange, sliced
salt and pepper, to taste

directions

  1. Preheat oven to 400F. 
  2. Line a baking sheet with parchment, place the salmon onto the paper, skin side down, and set aside.
  3. Place the figs, orange juice, soy sauce, honey, ginger and garlic in a heavy bottomed saucepan and bring to a boil. Reduce the heat, simmering until the figs are soft and the mixture is thick (10 minutes). Season with salt and pepper.
  4. Pour the sauce over the raw salmon and the bake for 20 minutes, or until the salmon flakes easily with a fork.
  5. Scatter green onion and orange slices over the fish to serve.
