- Add cubed salmon, egg, green onion, ginger, lime juice, and Takumi sauce to a food processor. Pulse until well combined. Scrape sides of food processor if needed. Add panko and pulse just a couple more times to combine.
- Form mixture into 4 equal patties.
- Heat a large skillet over medium high heat. Grease liberally with cooking oil. Cook salmon burgers for 4-5 minutes on each side, until cooked through.
- Serve salmon burgers on buns over microgreens brushed with extra Takumi sauce and topped with sliced cucumber.
