- Preheat oven to 400°F.
- Steam potatoes on the stovetop until tender.
- On a lined baking sheet, spread out potatoes so that they are 1-2 inches apart. Using a spatula, gently press on the potatoes until they are around ½ an inch thick.
- Drizzle with olive oil and season with salt and pepper.
- Bake for 30 minutes or until the edges of the potatoes are brown and crispy.
- While the potatoes bake, combine peanut butter, water, soy sauce, sriracha, rice vinegar, garlic, and lime juice in a bowl or jar. Whisk well and add more water if the consistency is still too thick to pour.
- Once the potatoes are out of the oven, drizzle with peanut sauce, top with peanuts and green onions, and serve!
