Meatballs Simmered in Plum Sauce

ingredients

2 1/2 pounds ground turkey
2 1/2 pounds mild Italian sausage
5 ounces onion, finely diced
2 ounces ginger, minced
2 ounces garlic, minced
1/2 cup cilantro, chopped
1/2 cup Kikkoman Soy Sauce
2 eggs
2 tablespoons salt
vegetable oil, as needed
6 cups Kikkoman Plum Sauce
24 cups cooked white rice
cilantro leaves, as needed

directions

To make meatballs: In bowl, mix together turkey, sausage, onion, ginger, garlic, cilantro, soy sauce, eggs and salt until well blended. Form mixture into 1-ounce balls. Heat oil in heavy sauté pan; brown meatballs on all sides. As they brown, transfer meatballs to large rondo. Add plum sauce to rondo; bring to a simmer over medium heat. Simmer, covered, for about 5 minutes or until meatballs are cooked through. (Yield: 92 meatballs)

For each serving, to order: Heat 4 meatballs in 1/4 cup sauce. Place 1-cup scoop rice on plate; place meatballs alongside. Pour sauce over meatballs and garnish with cilantro leaves.
