Avocado Toast with Soy Balsamic Glaze

Soy Balsamic Glaze
½ cup Kikkoman® Less Sodium Soy Sauce
½ cup balsamic vinegar
¼ cup brown sugar
3 sprigs of thyme (optional)
½ teaspoon black peppercorns
2 teaspoons cornstarch
2 tablespoons water

Avocado Mix

2 avocados
1 tablespoon lime juice
½ teaspoon Kikkoman® Less Sodium Soy Sauce
2 tablespoons green onions, chopped
½ tablespoon cilantro, chopped
Salt to taste
Ground black pepper to taste

For Serving
4 slices of whole grain country bread
½ cucumber, sliced thin (optional)
2 radishes, shaved (optional)
4 soy sauce-marinated eggs, sliced (optional)
4 roasted beets, sliced (optional)

directions

  1. Combine the soy sauce, vinegar, brown sugar, thyme, and peppercorns in a small pot. Bring to a low simmer, stir to dissolve the sugar.
  2. Combine the cornstarch and water in a small bowl. Using a whisk, stir in the cornstarch. Simmer until thick enough to coat the back of a spoon, approximately 3 minutes. Strain. Let cool.
  3. Peel, seed and coarsely mash the avocado. Add the lime juice, soy sauce, green onions, and cilantro. Season with salt and pepper.
  4. Toast or grill the bread until golden brown. Spread a layer of avocado on top of the bread.
  5. Drizzle with the Soy Balsamic Glaze.
  6. Top with choice of sliced cucumbers and radishes, egg, or roasted beets.
