ingredients

4 large eggs
2 tablespoons Kikkoman® Soy Sauce
1 teaspoon Kikkoman® Sriracha Hot Chili Sauce
2 tablespoons olive oil
½ cup chopped green pepper
¼ cup chopped white onion
2 8-inch whole wheat tortillas
1 cup shredded cheddar cheese
½ cup pico de gallo for serving

directions

  1. Whisk together eggs, soy sauce and sriracha sauce in a medium mixing bowl. Set aside.
  2. Heat one tablespoon of olive oil over medium heat in a large skillet. Add green pepper and onion. Sauté for 5 minutes, stirring regularly. Add eggs and use a spatula to combine with green pepper and onion mixture. Continue to cook until eggs are scrambled. Transfer to a small bowl.
  3. Clean and dry skillet. Grease lightly with remaining olive oil and heat over medium heat. Place one tortilla on skillet and top one half with ⅓ cup of cheese and ½ of scrambled egg mixture. Sprinkle with a few more tablespoons of cheese. Fold tortilla and cook for 3-4 minutes on each side. Transfer to a plate and repeat with remaining tortilla.
  4. Slice quesadillas into triangles and top with pico de gallo.
