Cook pasta according to package directions (8-10 minutes), drain and set aside. Sauté chicken in 2 tablespoons sesame oil until cooked through. Remove from pan and set aside. Warm additional 1 tablespoon sesame oil in a sauté pan and add onions, ginger, garlic and carrots. Cook for 3-4 minutes. Add crushed red pepper and sugar until the sugar starts to caramelize. Add Soy Sauce, and lime juice, stir to combine. Add eggs and quickly stir until scrambled, simmer for 2 minutes. Then add chicken, pasta and scallions and toss to coat. Garnish with cilantro and peanuts.
