- Lightly peel cucumbers and remove ends. Slice in half lengthwise. Use a small spoon to remove seeds and slice into ½ -inch thick slices. Add to a large bowl with garlic, ginger, cilantro, sesame oil , soy sauce , lime juice and chili flakes.
- Stir well to coat and refrigerate for 15 minutes. Transfer to a serving bowl and serve chilled.
