- Preheat grill to 400-425ºF. Slide 1 piece of zucchini, red onion, bell pepper, Brussels sprouts and mushrooms onto 1 metal skewer. Repeat so that there are 2 of each vegetable on skewer. Repeat with 3 more skewers to create 4 vegetable kabobs.
- Stir together ingredients for marinade and brush or drizzle over vegetables.
- Lightly grease grill grates with oil and place vegetable kabobs on the grill. Grill for 4-5 minutes. Turn and grill an additional 4-5 minutes.
- Slide vegetables off skewers and enjoy hot.
