ingredients

1 (12-ounce) bag cauliflower rice (or 1 medium head cauliflower, grated – see note*)
2 tablespoons vegetable oil
4 green onions, white and green parts chopped and separated
1 cup carrots, shredded
2 cloves garlic, minced
1 tablespoon ginger, grated fresh
1 cup baby peas, fresh or thawed from frozen
1 tablespoon Kikkoman® Gluten Free Soy Sauce
1 teaspoon Kikkoman® Sesame Oil
1 – 2 tablespoons Kikkoman® Gluten Free Sweet Soy Sauce
1 tablespoon toasted white sesame seeds

directions

  1. Cook the cauliflower rice according to the package directions.
  2. Heat the oil in a large skillet over medium-high heat. Add the white part of the green onions, carrots, garlic, and ginger and carrots and cook, stirring, until softened but not browned, 3-4 minutes. Add the peas and cook for another minute. Add the cauliflower rice and cook, stirring, for another minute or two. Add soy sauce and sesame oil and cook, stirring just until everything is heated through and thoroughly mixed, about 1 minute. Add the sweet soy sauce and green parts of the green onions and stir. Top with sesame seeds and serve hot.

Note: If you are making cauliflower rice from a head of cauliflower, simply grate the raw cauliflower with a box grater or pulse in a food processor until it resembles rice. Transfer to a microwave-safe bowl, cover with plastic wrap, and microwave on high for 4 minutes.
