Mexican Turkey Barbecue

ingredients

1 fresh tomato, quartered
1 cup chopped onion
1/3 cup Kikkoman Soy Sauce
1/4 cup chopped green bell pepper
3 tablespoons vegetable oil
2 tablespoons minced cilantro
1 tablespoon lime juice
2 cloves garlic, pressed
3/4 teaspoon black pepper
4 turkey breast cutlets*

directions

  1. Measure tomato, onion, soy sauce, bell pepper, oil, cilantro, lime juice, garlic and pepper in blender container; whirl on medium speed 30 seconds.
  2. Pour into large plastic food storage bag with turkey pieces. Press air out of bag; close top securely. Refrigerate 4 hours, turning bag over occasionally.
  3. Remove turkey from marinade; discard marinade.
  4. Place turkey on grill 4 inches from hot coals. Cook about 5 minutes on each side, or until turkey is no longer pink in center. (Or, place turkey pieces on rack of broiler pan. Broil 4 to 5 inches from heat 7 to 8 minutes on each side, or until turkey is no longer pink in center.)

    * Or, use a 2-1/2 to 3-pound turkey half breast, skinned, boned and cut lengthwise into 4 or 5 equal pieces.
