2 cups mashed potatoes
¼ cup sour cream
½ cup shredded cheddar cheese
¼ cup scallions, finely chopped
¼ cup bacon bits
½ teaspoon garlic powder
½ teaspoon onion powder
Salt, to taste
Pepper, to taste

1 tablespoon all-purpose flour
½ cup mozzarella cheese, cut into small cubes
1 cup Kikkoman® Panko Bread Crumbs​​
Oil

directions

  1. In a large bowl, mix mashed potatoes, sour cream, cheddar cheese, scallions, bacon bits, garlic powder, onion powder, salt, pepper, and flour until fully combined.
  2. Take a small portion of the mixture and flatten it in your hand. Place a cube of mozzarella cheese in the center, then roll it into a ball, ensuring the cheese is fully enclosed
  3. Roll each ball in panko pressing gently to ensure an even coating.
  4. Place the coated balls on a plate or tray and refrigerate for 15 minutes until firm.
  5. Heat oil in a deep skillet or pot to 350°F. Fry the potato balls in batches until golden brown and crispy, about 2-3 minutes per batch. Remove and drain on paper towels.
  6. Serve hot with your favorite dipping sauce, such as ranch, sour cream, or marinara.
