- In a large bowl, mix mashed potatoes, sour cream, cheddar cheese, scallions, bacon bits, garlic powder, onion powder, salt, pepper, and flour until fully combined.
- Take a small portion of the mixture and flatten it in your hand. Place a cube of mozzarella cheese in the center, then roll it into a ball, ensuring the cheese is fully enclosed
- Roll each ball in panko pressing gently to ensure an even coating.
- Place the coated balls on a plate or tray and refrigerate for 15 minutes until firm.
- Heat oil in a deep skillet or pot to 350°F. Fry the potato balls in batches until golden brown and crispy, about 2-3 minutes per batch. Remove and drain on paper towels.
- Serve hot with your favorite dipping sauce, such as ranch, sour cream, or marinara.
