Ramen Noodle Bowl with Peanut Sauce

ingredients

2 packages (3 ounces each) dried ramen noodles
1 cup finely shredded purple cabbage

For peanut sauce
½ cup creamy unsalted peanut butter, at room temperature
3 tablespoons Kikkoman® Soy Sauce
2 tablespoons Kikkoman® Sesame Oil
2 tablespoons Kikkoman® Rice Vinegar
¼ cup warm water
1 tablespoon honey
½ teaspoon Kikkoman® Sriracha Hot Chili Sauce (or to taste)

For garnish
2 slices, lime
½ cup chopped peanuts
¼ cup chopped cilantro
2 chilis, sliced

directions

  1. Cook ramen noodles according to package directions. Discard the included seasoning package if your noodles included one. While noodles are cooking, stir together ingredients for sauce in a small bowl until smooth and creamy.
  2. Strain noodles and place in a medium mixing bowl. Add shredded cabbage, using tongs to toss.
  3. Toss in peanut sauce to coat noodles.
  4. Divide between 2 bowls and top with a slice of lime, peanuts, cilantro, and chilis, as desired.
