ingredients

2 cups Pearl Organic Original Soymilk
3/4 cups Garlic & Green Onion Takumi
1/2 lb Bacon, sliced into 1/2 inch pieces
1 pkg Frozen chopped spinach (drained until dry)
6 Eggs
4 oz Goat cheese
8 cups Baguettes cut into 1/2 inch pieces (about 1-1/2 loaves)

directions

1) Combine milk and Takumi in a medium saucepan over high heat until it simmers, remove from heat and cool to room temperature.

2) Cook bacon until crisp, add drained spinach and stir-fry 1 minute. Remove pan from heat and set aside.

3) In a large bowl, whisk the eggs. Add cooled milk and goat cheese. Stir in bread and spinach mixture, combine.

4) Pour mixture into a non-stick 13″x9″ baking dish, pressing down so the bread absorbs the liquid. Bake at 400°F for 35 minutes until all liquid is absorbed.
