1 baguette, sliced into ½-inch pieces
1 tablespoon olive oil
2 ripe peaches, diced
1 cup cherry tomatoes, halved
1 small shallot, finely chopped
1 clove garlic, minced
2 tablespoons Kikkoman® Umami Joy Sauce
2 tablespoons fresh basil, chopped (plus more for garnish)
Salt and pepper to taste
2 large or 4 small balls of burrata cheese 

directions

  1. Preheat oven to 375°F. Arrange baguette slices on a baking sheet, brush lightly with olive oil. Bake for 8–10 minutes or until golden and crisp. Let cool slightly.
  2. In a bowl, mix diced peaches, cherry tomatoes, shallot, and garlic. Add olive oil, Umami Joy Sauce, and basil. Toss gently to combine. Season with salt and pepper.
  3. Spoon the tomato-peach mixture onto each toasted baguette slice. Add a small dollop of goat cheese or a piece of burrata before or after adding the topping. Garnish with extra basil.
