- Preheat oven to 300 degrees
- Trim as much fat as you can. Fat tends to rancify quickly, so the less fat on the meat, the better your jerky will store
- Slice meat into ¼” thick strips and marinate overnight (it’s easier to slice if meat is partially frozen)
- Line bottom of your oven with foil and pat each slice dry
- Place meat directly on oven rack, or stick a toothpick through the top of each slice and lay toothpicks on rack so the strips hang vertically
- Bake for 10 min
- Turn temperature down to 160 (or lowest setting, if higher than that) and crack the door open with a metal or wooden utensil to let the moisture out
- Bake for 4-6 hours, depending on your preference for how chewy or dry you like your jerky
