2 tablespoons olive oil
1 cup chopped sweet potatoes
1 cup sliced mushrooms
2 cups fresh spinach
⅔ cup cooked brown rice
½ teaspoon dried thyme
⅛ teaspoon garlic powder
2 tablespoons Kikkoman® Less Sodium Soy Sauce
1 egg, fried or scrambled
½ medium avocado, sliced
⅓ cup halved grape tomatoes
Cracked black pepper

directions

  1. Heat olive oil over medium heat. Add sweet potatoes and cook for 6-7 minutes, stirring regularly. Add mushrooms and cook for 5 minutes longer. Stir in spinach and cook until wilted, about 2 minutes.
  2. Add rice to pan. Add thyme, garlic powder, and soy sauce. Stir well and cook 1 minute longer.
  3. Transfer vegetables and rice to a serving bowl. Top with a fried or scrambled egg, sliced avocado, and cherry tomatoes. Season with pepper and enjoy hot.
