Teriyaki Chicken Skewers​

Ingredients

2 pounds boneless chicken thighs, cut into 1½-inch chunks
½ cup Kikkoman® Teriyaki Takumi, Original (plus extra for basting)
Wooden skewers (soaked in water for at least 30 minutes to prevent burning)
1 red bell pepper, cut into 1½-inch pieces
1 zucchini, sliced into ½-inch thick rounds
1 red onion, cut into chunks (about ½-inch pieces)
Optional: sliced green onions for garnish

Directions

  1. Marinate the chicken (optional)
  2. In a large bowl or zip-top bag, combine the chicken chunks with ½ cup teriyaki sauce.
  3. Toss to coat evenly.
  4. Cover and refrigerate for at least 30 minutes, up to 2 hours. (Tip: You can skip marinating if short on time—the sauce is flavorful enough for basting alone.)
  5. Prep the skewers.
  6. If you haven’t already, soak the wooden skewers in water for at least 30 minutes.
  7. Thread chicken, bell pepper, zucchini, and red onion pieces alternately onto skewers. Leave a little space between each piece so they cook evenly.
  8. End each skewer with a veggie piece to help hold everything in place.

Grill Method

  1. Preheat grill to medium-high heat.​
  2. Lightly oil the grates or spray with nonstick grill spray.​
  3. Place skewers on the grill and cook for 12–15 minutes, turning every 3–4 minutes.​
  4. Baste with extra teriyaki sauce during the last few minutes of cooking.​
  5. Cook until chicken reaches 165°F internal temperature and is slightly charred and glossy.​

Oven Method (Broiler)​

  1. Preheat your oven’s broiler on high. Line a baking sheet with foil and place a wire rack on top (optional, for even cooking).​
  2. Arrange the skewers in a single layer.​
  3. Broil for 14–18 minutes, turning halfway through.​
  4. Baste with extra sauce during the last 5 minutes of broiling.​
  5. Look for caramelized edges and cooked-through chicken.​

For Serving​

  1. Remove skewers from heat.​
  2. Optional: Sprinkle with chopped green onions for color and freshness.​
  3. Serve with steamed rice, noodles, salad or veggies for a complete meal.​
  4. For extra flavor: Simmer a small amount of teriyaki sauce to thicken and drizzle over skewers before serving.
