Sweet & Sour Loaded Totchos

Crispy tater tots topped with sweet & sour chicken, melty cheddar, colorful vegetables, and finished with a drizzle of sweet & sour sauce for a craveable K-12 entrée.

Ingredients

• 12 pounds Potato products, frozen, round
• 3 pounds 2 ounces Kikkoman Sweet & Sour Sauce
• 3 pounds 2 ounces Cheese, cheddar, shredded
• 1 pound 4 ounces Pepper, red, bell, diced
• 10 ounces Cabbage, red, shredded
• 8 ounces Cabbage, green, shredded
• 10 ounces Carrots, matchsticks
• 2 pounds Pineapple, fresh, diced
• 2 ounces Cilantro, chopped
• 8 ounces Onions, green, chopped
• 3 ¼ cup Kikkoman Sweet & Sour Sauce

Directions

  1. Bake potato rounds according to manufacturer directions until crisp and golden.
    1.CCP: Hold hot uncovered at ≥135°F during service.
  2. Preheat oven to 350 degrees.
  3. Place chicken in 2 inch full hotel pan and pour sauce over and stir. Cover and bake until chicken is saucy.
    1. CCP: Cook poultry to ≥165°F for 15 sec.
  4. Place boats on sheet tray. 3X5
  5. To assemble:
    1. 12 Crispy Potato Rounds
    2. 2 oz spoodle Sweet & Sour Chicken
    3. 2 oz spoodle Cheddar Cheese
    4. CCP: Hold hot uncovered at ≥135°F during service.
  6. Mix bell peppers, cabbage, carrots, pineapple, cilantro, and green onions.
    1.CCP: Hold cold at ≤41°F during preparation and service.
  7. For service add a heaping 2 oz spoodle of vegetable mixture on top of warm boat with potato rounds, chicken and cheese.
  8. Drizzle with 1 Tbsp of Sweet and Sour Sauce.
