About this recipe

Here it is! The juicy turkey trick everyone’s talking about—an overnight soak in a simple brine made with traditionally brewed Kikkoman® Soy Sauce.

And here’s the amazing part. This brine doesn’t add a noticeable soy sauce flavor to your bird. It just makes it succulent, savory, and spectacularly golden brown.

ingredients

16-24 pound turkey
2 gallons cold water
10 ounces Kikkoman® Soy Sauce*
1/2 cup kosher salt
1/2 cup sugar
2 tablespoons dried sage
2 tablespoons dried celery seed
1 tablespoon dried thyme

*May substitute Gluten Free Tamari Soy Sauce

directions

  1. Remove giblets and turkey neck; rinse turkey inside and out.
  2. In a large stock pot or 5 gallon container, mix water with remaining brining ingredients. Stir well until all salt dissolves.
  3. Place turkey in the pot, cover with a lid and marinate in the refrigerator for at least 8 hours or overnight.
  4. Remove turkey from brine, rinsing well. Follow your regular cooking instructions.
