- Stir together teriyaki sauce, ginger, and garlic in a large bowl. Add vegetables and stir to coat. Marinate 30 minutes to 2 hours.
- Thread vegetables onto 8-inch skewers and reserve marinade for basting.
- Heat a grill pan or outdoor grill over medium-high heat. Grease well. Add vegetable skewers and cook for 3-4 minutes on each side, basting occasionally with marinade from bowl.
- Remove from grill, plate, and serve.
