ingredients

For Chicken:
1 large egg
½ cup Kikkoman® Panko Bread Crumbs
¼ cup grated Parmesan cheese
¼ teaspoon garlic powder
½ teaspoon salt
½ teaspoon black pepper
2 4-ounce chicken breasts

For Dressing: 
¼ cup olive oil
3 tablespoons fresh lemon juice
1 tablespoon honey
1 teaspoon Dijon mustard
½ teaspoon dried oregano
¼ teaspoon salt

For Salad: 
5 cups leafy greens
½ cup halved grape tomatoes
½ cup chopped cucumber
3 hardboiled eggs, quartered
2 strips thick cut bacon, cooked and chopped
½ ripe avocado, sliced
⅓ cup crumbled blue cheese
⅓ cup shredded cheddar cheese

directions

  1. Preheat oven to 400ºF and line a small baking sheet with parchment paper. Whisk egg in a shallow bowl. In a second bowl, add panko, Parmesan cheese, garlic powder, salt and pepper. Blot chicken breasts dry with paper towel. Dip chicken breasts in egg allowing excess egg to drip back into dish. Coat in panko mixture and place on baking sheet. Bake for 32-35 minutes, until panko is golden brown and crisp. Cool chicken at room temperature for 10 minutes.
  2. While chicken bakes, whisk together ingredients for dressing in a small jar.
  3. Arrange ingredients for salad in a large serving bowl or platter. Slice chicken and serve over salad. Add dressing right before serving.
