Air Fryer Eggplant Fritters

Ingredients

1 medium eggplant 
1 tablespoon olive oil
1 teaspoon garlic, minced
1 large egg 
1 cup Kikkoman® Panko Bread Crumbs 
2 tablespoons all-purpose flour 
2 tablespoons fresh dill, chopped
2 tablespoons green onion, finely chopped
1 teaspoon smoked paprika 
1 teaspoon salt 
¼ teaspoon black pepper  

For Yogurt Sauce 
½ cup Greek yogurt 
¼ cup cucumber, peeled and grated
½ teaspoon minced garlic 
¼ teaspoon salt 
⅛ teaspoon black pepper  

Directions

  1. Remove top of eggplant and slice in half lengthwise. Use a sharp knife to score eggplant through flesh then turn and score in the opposite direction. Grease basket of air fryer with cooking spray and drizzle olive oil on cut sides of eggplant. Place in air fryer cut side up and air fry at 360ºF for 12 minutes.  
  2. When eggplant is cool enough to handle, scoop flesh into a mixing bowl. Add garlic, egg, panko, flour, dill, green onion, smoked paprika, salt and pepper. Stir well until evenly mixed.  
  3. Form into round fritters using a ¼ cup measuring scoop, shaping with hands. Grease basket of air fryer and add fritters, leaving space in between.  
  4. Air fry at 360ºF for 4 minutes. Gently flip and air fry for 3-4 minutes longer. 
  5. While fritters cook, stir together ingredients for yogurt sauce. Serve fritters hot alongside yogurt sauce for topping.
