Grilled Peach Salad

Ingredients

1 tablespoon olive oil 
2 medium ripe peaches, sliced 
6 cups leafy lettuce 
1 cup sliced Campari tomatoes 
⅓ cup thinly sliced red onion 
½ cup toasted walnuts  
2 ounces creamy goat cheese  

Dressing  

3 tablespoons olive oil 
2 tablespoons Kikkoman® Rice Vinegar 
1 tablespoon honey 
1 tablespoon Dijon mustard 
¼ teaspoon dried thyme 
¼ teaspoon salt 
⅛ teaspoon black pepper  

Directions

  1. Grease a medium grill pan with olive oil and heat over medium-high heat for 2 minutes. Place peach slices on pan and grill for 1 minute on each side. Set peaches aside to cool.  
  2. Combine ingredients for dressing in a small jar and secure lid. Shake vigorously.  
  3. Arrange lettuce, tomatoes, onions, grilled peaches and walnuts on a serving platter. Pour dressing on top and finish with dollops of creamy goat cheese.
