The Teriyaki Story
Teriyaki was born in Japan centuries ago as a simple mixture of umami-rich soy sauce and mirin, a Japanese sweet cooking wine. The appetizing sheen the sauce takes on after it’s cooked inspired its name—a combination of the words teri (luster) and yaki (grilled or broiled). Eventually, Japanese-Americans in Hawaii added ingredients like fresh ginger, brown sugar, pineapple juice and green onions to the original soy-mirin base.
