Asian Style Porridge

ingredients

3 gal Water 

½ cup Vegetable base, low sodium

25 cups Rolled oats, quick

½ cup Kikkoman® Less Sodium Soy Sauce

½ cup Butter, unsalted

1 lb. + 9 oz. Sausage crumbles

Optional Garnish: 

Kimchi slaw as needed

Sausage crumbles as needed

Spicy mayonnaise as needed

directions

  1. Add water and vegetable base to large stock pot or tilt skillet and bring to simmer. 
  2. Add oats and whisk. 
  3. Cook for 10 minutes stirring occasionally. 
  4. Add sausage crumbles to oats and cook for approximately 10 more minutes. Stirring occasionally.
  5. Add butter and soy sauce, stir until butter is completely melted and mixed in with oat mixture.
  6. Hot hold at 135°F or higher until time of service.
  7. Serve 1 cup of oats with an 8 oz spoodle.
  8. Offer sausage crumbles, kimchi slaw, and spicy mayo as additional toppings.

Variation: Meat based, or plant-based sausage crumbles can be used
