Moroccan Meatballs

ingredients

2 pounds lean ground beef
2 eggs
3 ounces onion, chopped
1/2 cup KIKKOMAN Panko
1/2 cup cilantro, chopped
1/4 cup KIKKOMAN Soy Sauce
1 tablespoon garlic, chopped
2 teaspoons cumin
2 teaspoons salt
1 teaspoon sweet paprika
1/4 teaspoon cayenne
olive oil, as needed
2 cups water
1 cup lemon juice
1 teaspoon pepper flakes
1 teaspoon cinnamon
chopped cilantro, as needed

directions

In mixing bowl, combine beef, eggs, onion, panko, 1/2 cup cilantro, soy sauce, garlic, cumin, salt, paprika and cayenne mixing lightly but thoroughly. Form into 1-ounce balls.

In sauté pan, heat oil; brown meatballs on all sides. Drain well on paper towels.

In a pan large enough to hold meatballs in one layer, bring water, lemon juice, pepper flakes and cinnamon to simmer. Add meatballs; simmer, covered, about 5 minutes or until meatballs are cooked through. Uncover and simmer until sauce is slightly thickened. Garnish with chopped cilantro.
