ingredients

Chipotle Mayonnaise:
1 can chipotle chiles in adobo
4 cups mayonnaise
1/4 cup Kikkoman Less Sodium Soy Sauce

Smoked Corn Relish:
10 ounces frozen corn kernels
1 pound diced roasted bell peppers
1 ounce sliced green onions
1/4 cup chopped cilantro
4 teaspoons Kikkoman Less Sodium Soy Sauce
4 teaspoons minced jalapeño chiles (or to taste)
2 teaspoons ground cumin
salt and black pepper

To make Chipotle Mayonnaise: Purée chipotle chiles in adobo. Mix mayonnaise, soy sauce and 1/4 cup chipotle puree. (Yield: about 4 cups.)

To make Smoked Corn Relish: Dry-roast 10 corn kernels in a single layer in a very hot skillet until corn begins to blacken. Mix in bell peppers, green onions, cilantro, soy sauce, jalapeño chiles and cumin; seaason with salt and pepper. (Makes about 4 cups.)

Top grilled burger with Jack cheese, sandwich in bun with Chipotle Mayonnaise, Smoked Corn Relish, cilantro sprigs, lettuce and tomato slices.
