A chef-driven mashup reimagining classic pastrami through Cantonese char siu. Thin-sliced smoked pork butt is glazed in a glossy hoisin-teriyaki sauce and stacked on an Asian-style soft roll with Kikkoman® rice vinegar pickled greens, Chinese hot mustard aioli, charred scallion relish, and black sesame panko crunch for a bold balance of smoke, sweet-savory depth, and texture.

Ingredients

Char Siu Pork Pastrami 

14 pounds boneless pork butt 

3½ quarts cold water 

1¼ cups Kikkoman® 50% Less Sodium Gluten-Free Teriyaki Marinade & Sauce 

⅔ cup Kikkoman® Rice Vinegar 

158 grams kosher salt 

120 grams brown sugar 

17.5 grams Prague Powder #1 / pink curing salt #1 

12 garlic cloves, smashed 

5 ounces fresh ginger, sliced 

1 bunch scallions, crushed 

6 star anise pods 

1 cinnamon stick 

3 tablespoons coriander seed 

3 tablespoons black peppercorns 

1 tablespoon fennel seed 

2½ teaspoons Chinese five-spice 

Zest of 1 orange

 

Pastrami Rub 

⅔ cup cracked coriander seed 

⅔ cup cracked black pepper 

3 tablespoons Chinese five-spice 

3 tablespoons garlic powder 

1½ tablespoons ground ginger

⅓ cup brown sugar 

 

Char Siu Hoisin-Teriyaki Glaze 

2½ cups Kikkoman® Gluten-Free Hoisin Sauce 

1¼ cups Kikkoman® 50% Less Sodium Gluten-Free Teriyaki Marinade & Sauce 

1¼ cups pineapple juice 

⅔ cup honey 

⅔ cup Kikkoman Rice Vinegar 

⅓ cup fresh ginger, minced 

⅓ cup garlic, minced 

2 teaspoons Chinese five-spice 

3 tablespoons chili garlic sauce or sambal 

 

Rice Vinegar Pickled Asian Greens 

2 pounds napa cabbage, sliced 

1 pound bok choy stems and leaves, sliced 

1 pound mustard greens, sliced 

3 cups Kikkoman® Rice Vinegar 

1½ cups water 

1 cup granulated sugar 

3 tablespoons kosher salt 

2 ounces fresh ginger, sliced 

6 garlic cloves, crushed 

1 tablespoon crushed red pepper flakes 

 

Chinese Hot Mustard Aioli 

2 cups mayonnaise 

¼ cup Chinese hot mustard powder 

¼ cup cold water 

2 tablespoons Kikkoman Rice Vinegar 

2 tablespoons honey 

1 tablespoon garlic, finely grated 

1 teaspoon kosher salt 

½ teaspoon white pepper

 

Black Sesame Panko Crunch 

3 cups Kikkoman® Panko-Style Coating Gluten-Free 

¼ cup black sesame seeds 

¼ cup white sesame seeds 

3 tablespoons neutral oil 

3 tablespoons Kikkoman® Non-GMO Gluten-Free Sesame Oil 

2 tablespoons scallion powder 

1 tablespoon crushed red pepper flakes 

1 tablespoon granulated sugar 

1½ teaspoons kosher salt

 

Charred Scallion Relish 

5 bunches scallions 

¼ cup neutral oil 

3 tablespoons Kikkoman® Rice Vinegar 

2 tablespoons fresh ginger, minced 

1 tablespoon garlic, minced 

1 tablespoon granulated sugar 

1 teaspoon kosher salt 

1 tablespoon Kikkoman® Non-GMO Gluten-Free Sesame Oil 

 

Sandwich Assembly 

25 Asian-style soft rolls 

7 pounds 13 ounces sliced char siu pork pastrami 

2 cups Chinese hot mustard aioli 

25-32 ounces rice vinegar pickled Asian greens, drained 

2 cups charred scallion relish 

3 cups black sesame panko crunch 

Char siu hoisin-teriyaki glaze, as needed for reheating and brushing 

 

Directions

  1. Prepare the pork brine: 
    • For curing accuracy, weigh the kosher salt, brown sugar, and Prague Powder #1 in grams. Do not substitute a volume measurement for Prague Powder #1.
    • In a large pot, simmer 1 quart water with kosher salt, brown sugar, Prague Powder #1, garlic, ginger, scallions, star anise, cinnamon, coriander, peppercorns, fennel, Chinese five-spice, and orange zest until dissolved and aromatic.
    • Remove from heat. Add remaining cold water, Kikkoman 50% Less Sodium Gluten-Free Teriyaki Marinade & Sauce, and Kikkoman Rice Vinegar. Chill completely before using.
  2. Submerge pork butt in the chilled brine and cure under refrigeration for 5-7 days, turning daily. For even penetration, inject some of the brine into the thickest parts of the pork before curing.  
  3. Remove pork from brine, rinse lightly, and soak in fresh cold water for 30-45 minutes if needed to reduce surface salinity. Pat dry and refrigerate uncovered overnight to help form a tacky surface. 
  4. Combine pastrami rub ingredients. Coat pork evenly with rub. Smoke at 225-250°F until pork reaches 155-160°F internal temperature. 
  5. Prepare the glaze: Combine Kikkoman Gluten-Free Hoisin Sauce, Kikkoman 50% Less Sodium Gluten-Free Teriyaki Marinade & Sauce, pineapple juice, honey, Kikkoman Rice Vinegar, ginger, garlic, Chinese five-spice, and chili garlic sauce or sambal in a saucepan. Simmer 8-10 minutes until glossy. 
  6. Transfer pork to a covered pan with 1½-2 cups glaze and finish cooking until pork reaches 170-175°F internal temperature. Rest, chill fully, and slice thinly across the grain. 
  7. Prepare the pickled Asian greens:
    • Combine napa cabbage, Bok choy, and mustard greens in a nonreactive container.
    • Bring Kikkoman Rice Vinegar, water, sugar, salt, ginger, garlic, and crushed red pepper flakes to a simmer.
    • Pour over greens, cool, and refrigerate at least 4 hours or overnight. Drain well before service. 
  8. Prepare the Chinese hot mustard aioli: Bloom Chinese hot mustard powder with cold water for 10 minutes. Whisk into mayonnaise with Kikkoman Rice Vinegar, honey, garlic, salt, and white pepper. Hold refrigerated. 
  9. Prepare the black sesame panko crunch:
    • Toast Kikkoman Panko-Style Coating Gluten-Free in neutral oil and Kikkoman Non-GMO Gluten-Free Sesame Oil until golden.
    • Add black sesame seeds, white sesame seeds, scallion powder, crushed red pepper flakes, sugar, and salt.
    • Cool completely and hold dry. 
  10. Prepare the charred scallion relish: Lightly oil scallions and char until blistered. Chop and combine with Kikkoman Rice Vinegar, ginger, garlic, sugar, salt, and Kikkoman Non-GMO Gluten-Free Sesame Oil. 
  11. To assemble each sandwich, lightly toast an Asian-style soft roll. Spread the bottom roll with Chinese hot mustard aioli. Add drained pickled Asian greens, then pile with 5 ounces warm glazed pork pastrami. Brush visible pork edges with additional char siu hoisin-teriyaki glaze. Top with charred scallion relish and black sesame panko crunch. Add visible drizzle or spread of hot mustard aioli before capping with the top roll. 

Serving Suggestion 

Pair with rice vinegar pickled greens, cucumber salad, furikake kettle chips, or ginger-scallion potato salad. This sandwich makes an ideal globally inspired LTO for campus dining, combining smoky pastrami craft with Cantonese char siu flavors.
