- Pour flour onto a clean work surface and create a mound. Make a large well and add eggs, olive oil, lukewarm water, and sea salt.
- Use hands to gently work the dough into a ball. Add more water as needed and continue to work dough into a pliable ball.
- Divide dough into 8 equal sized balls. Place 7 balls in a bowl and cover with a towel to keep moist. Tear the remaining ball into 2 pieces and begin rolling 1 piece into a single log on work surface using fingertips. Tear in half and continue to roll back and forth into a thin ¼ – inch noodle, about 10 inches long. Continue with the other pieces and the remaining dough balls. Each ball will make approximately 4-5 noodles. If noodles are too dry when rolling, dampen fingertips with water and moisten the noodle as you roll.
- Set aside the completed noodles and lightly dust with flour to keep them dry.
- Once all noodles are complete, bring 8 cups of water to a rolling boil in a large pot. Gently add the noodles to your pot and boil for 5-6 minutes or until noodles float to the top.
- While noodles cook, whisk together ingredients for peanut sauce in a small bowl until it reached a smooth consistency.
- Strain noodles and add them to a large bowl. Pour sauce over noodles and gently stir to coat, evenly. Serve warm or chilled, topped with chopped peanuts and cilantro.
