ingredients

2 large grapefruits, peeled and cut into chunks the size of a quarter
1/4 cup chopped fresh cilantro
1/4 cup thinly sliced red onion
8 ounces of pre-cooked shrimp (if using frozen, thaw first)
1 T. Kikkoman Less Sodium Soy Sauce
1 T. canola oil
1 T. Kikkoman Rice Vinegar
Freshly ground pepper to taste (optional)

directions

  1. In a bowl, toss all the ingredients making sure the vinaigrette is evenly distributed. Chill for 1 hour.

    Per serving: 130 calories, 4g total fat, 110mg cholesterol, 274mg sodium, 11g carbohydrates, 2g dietary fiber, 13g protein.
