- Preheat oven to 425ºF. Heat olive oil over medium-high heat in a large oven safe skillet for 2 minutes. Season chicken thighs with salt, pepper and garlic powder.
- Place chicken thighs on skillet seasoned side down and sear for 5 minutes. Turn heat off and flip chicken thighs.
- Stir together sriracha, honey and chicken stock in a measuring cup. Pour over chicken thighs. Transfer to middle rack of oven and bake for 15 minutes.
- Carefully baste chicken with sauce from skillet. Continue to bake for 10-15 minutes longer.
- Remove from oven and baste chicken again with sauce from pan. Serve hot with lime wedges.
