- Place snow peas in small bowl; pour in enough boiling water to cover and let stand 2 minutes. Drain; cool under cold running water and drain.
- Pour boiling water over bean sprouts in colander; cool immediately under cold running water and drain thoroughly.
- Tear spinach and lettuce into bite-size pieces; combine with snow peas, bean sprouts and mushrooms in large serving bowl. Chill.
- Stir together vinegar, sugar, soy sauce, ginger and 2 Tbsp. water until sugar dissolves. Pour desired amount of dressing over salad mixture; toss well to coat all ingredients.
