ingredients

1/4 pound fresh snow peas, trimmed
Boiling water
1/4 pound fresh bean sprouts
1/2 pound fresh spinach, washed
1/2 head curly leaf lettuce, washed
1/4 pound fresh mushrooms, thinly sliced
1/4 cup Kikkoman Rice Vinegar
2 tablespoons sugar
2 tablespoons Kikkoman Soy Sauce
1/2 teaspoon ground ginger

directions

  1. Place snow peas in small bowl; pour in enough boiling water to cover and let stand 2 minutes. Drain; cool under cold running water and drain.
  2. Pour boiling water over bean sprouts in colander; cool immediately under cold running water and drain thoroughly.
  3. Tear spinach and lettuce into bite-size pieces; combine with snow peas, bean sprouts and mushrooms in large serving bowl. Chill.
  4. Stir together vinegar, sugar, soy sauce, ginger and 2 Tbsp. water until sugar dissolves. Pour desired amount of dressing over salad mixture; toss well to coat all ingredients.
