Korean Style Marinated Dungeness Crab

Ingredients

2 cups Kikkoman® Soy Sauce​
2 cups dashi​
1/3 cup Kikkoman® Kotteri Mirin​
1/3 cup sake​
½ onion​
5 garlic cloves​
3 slices of ginger​
3 dried chili​
1 persimmon

Toppings
Raw egg yolk (optional)​
Korean seaweed​
Sesame seeds ​
Shiso leaf​

Directions

  1. Add in all ingredients in a pot and simmer for 20 minutes, then cool down.
  2. Pull off the tiny ends of the crab legs to allow marinade to penetrate. Clean and quarter crab, then pour cooled marinade onto crab in a bowl.
  3. Marinate crab in refrigerator for 48 hours.
  4. Drain the marinade and save a little in a jar
  5. Remove crab meat from the shells. 
  6. Enjoy over rice with toppings and extra marinade poured over top.
