Umami Joy Marinated Grilled Vegetables

Ingredients

1 medium zucchini, sliced
2 bell peppers, sliced into thick strips
4 ounces cremini mushrooms, stems removed 
1 medium red onion, sliced into ½-inch pieces 

For Marinade
½ cup Kikkoman® Umami Joy Sauce 
¼ cup olive oil 
1 tablespoon honey 
2 teaspoons garlic, minced
1 teaspoon dried thyme 
½ teaspoon dried rosemary 
½ teaspoon cracked black pepper  

For Serving
1 tablespoon fresh thyme 

Directions

  1. Stir together ingredients for marinade in a small bowl. Reserve ¼ cup of marinade for serving.  
  2. Arrange sliced vegetables in a large shallow dish and pour marinade evenly over the top. Stir to coat. Cover and marinate for 30 minutes at room temperature.  
  3. Heat outdoor grill or grill pan to medium heat. Grease with cooking oil. Transfer vegetables to the hot grill using tongs and grill for 3 minutes. Turn and grill 2-3 minutes longer.  
  4. Serve hot with remaining marinade for drizzling or dipping.
