ingredients

Sauce
100g evaporated milk 
100g Kikkoman®  Soy Sauce 
50g Kikkoman® Sushi Sauce 
50g light brown sugar 
30g Kikkoman® Sesame oil 
5g kosher salt 
2g black pepper 
1g white pepper 
3 large cloves garlic, roughly chopped  

Nam Jim (Seafood Sauce)
100g lemon juice 
80g garlic cloves 
60g Kikkoman® Less Sodium Soy Sauce 
50g palm sugar 
40g Thai chiles
10g cilantro
5g kosher salt  

Steamed Shrimp
1/2 pound large raw shell on, deveined shrimp 
2 oz. bacon, chopped
50g scallions, cut in ½-inch pieces 
50g Chinese celery, roughly chopped 
10g fresh ginger, peeled and thinly sliced
1 tablespoon diagonally sliced red long hot chiles, plus additional for garnish
 

directions

  1. Place glass noodles in a large bowl and cover with hot water. Soak for 12 minutes or until they begin to soften. Drain well and snip noodles a few times with scissors. 
  2. While noodles are soaking, whisk together all sauce ingredients in a medium bowl.   
  3. To prepare Nam Jim Sauce, place all ingredients in a blender or food processor. Pulse until finely chopped, but not pureed. Store in an airtight container in the refrigerator until ready to use.  
  4. Place shrimp in a heavy, medium sized pot in  a single layer and place the bacon and soaked. drained glass noodles on top. Add scallions, celery, ginger and sliced chiles, then pour sauce over the top.  
  5. Cover pot and set over high heat. Cook until sauce is bubbling, about 3 minutes. Use tongs to stir the noodles and bring the shrimp to the top, flipping the shrimp cooked side up. Cover again and cook until the shrimp are cooked through and the noodles have absorbed the sauce, about 2 minutes more.  
  6. Serve immediately garnished with additional sliced chilies and cilantro and Nam Jim Sauce.
