Ingredients
- MEATBALLS
- 2 pounds 80/20 ground beef
- ½ cup Kikkoman Panko
- ¼ cup whole milk
- 1 large egg
- ¼ cup very finely minced onion
- 1 tablespoon grated ginger
- 3 garlic cloves, grated
- 1 tablespoon Kikkoman Traditionally Brewed Soy Sauce
- ¼ cup Kikkoman Teriyaki BBQ Sauce- Korean BBQ
- 2 teaspoons Kikkoman Toasted Sesame Oil
- 2 teaspoons of salt
- 1 teaspoon freshly ground black pepper
- KOREAN BBQ SAUCE
- ½ cup Kikkoman Teriyaki BBQ Sauce- Korean BBQ
- 2 tablespoons water
- 1 tablespoon Kikkoman rice vinegar
- 1 teaspoon honey, if needed
- TO FINISH
- Toasted sesame seeds
Quick pickled daikon radish, Asian pear, and carrot.
Shiso or perilla leaves, chiffonade- optional
Directions
- Combine panko and milk and allow to stand for 5 minutes.
- Add beef, egg, onion, ginger, garlic, soy sauce, sesame oil, Korean BBQ teriyaki sauce, salt, and pepper.
- Mix gently just until evenly combined. Avoid overworking the meat. Let the mixture sit in a Fresh and Save bowl for up to 30 minutes or in the refrigerator for up to 24 hours.
- Portion into approximately 1¼-inch meatballs.
- Heat a Demeyere skillet over medium-high heat with a thin film of neutral oil.
- Brown meatballs on all sides.
- Reduce heat and continue cooking until the centers reach 160°F.
- Remove meatballs from the pan.
- Add Korean BBQ sauce, water, and rice vinegar to the skillet.
- Simmer briefly until glossy and slightly reduced.
- Return meatballs and toss until evenly glazed.
- Finish with sesame seeds and serve with quick pickled Asian pear, carrot, and daikon for freshness and acidity.
