Ingredients
4 medium poblano peppers
1 pound lean ground beef
½ cup white onion, chopped
⅓ cup Kikkoman® Teriyaki Marinade & Sauce
½ teaspoon cornstarch
1 cup broccoli florets, finely chopped
½ cup brown rice, cooked
For Serving
¼ cup cilantro, chopped
Directions
- Preheat oven to 375ºF and line a large baking pan with parchment paper. Cut peppers in half lengthwise and remove seeds. Place peppers on baking sheet cut side up.
- Add ground beef to a large skillet over medium heat. Cook for 5 minutes. Stir in onions and cook for 3 minutes longer.
- Whisk together teriyaki and cornstarch. Pour over ground beef and simmer for 2 minutes to thicken.
- Stir in chopped broccoli and brown rice.
- Spoon beef mixture into peppers and cover pan with aluminum foil. Bake for 20 minutes.
- Serve hot garnished with chopped cilantro.
