ingredients

1 tablespoon neutral cooking oil 
½ cup white onion, finely chopped 
1 teaspoon ginger, grated
1 teaspoon garlic, minced
2 tablespoons unsalted butter 
3 cups day old white rice, chilled 
1 cup kimchi
1 cup frozen peas and carrots  

For Sauce
¼ cup kimchi juice
2 tablespoons Kikkoman® Soy Sauce 
2 tablespoon Kikkoman® Fish Sauce 
1 teaspoon Kikkoman® Sesame Oil  

For Topping
1 large egg 
2 tablespoons green onion, chopped 

directions

  1. Measure 1 cup of kimchi and add to a strainer over a bowl. Press with a spoon to release juice. Add additional juice from kimchi jar until you reach ¼ cup.  
  2. Stir together soy sauce, fish sauce, sesame oil and kimchi juice. Set aside. 
  3. Heat oil over medium heat in a large skillet. Add onions and cook for 3 minutes stirring frequently. Add ginger and garlic. Cook 1 minute longer.  
  4. Melt butter in skillet and add rice. Stir to coat rice. Cook for 3 minutes. Add kimchi, frozen vegetables and sauce. Stir well. Cook 5 minutes longer, until all ingredients are heated through. Cover to keep warm.  
  5. Fry egg in a separate pan. Top fried rice with egg and chopped green onions and serve hot.
