ingredients

Soy Vinaigrette:
1 cup Kikkoman Soy Sauce
1 cup Kikkoman Mirin
2/3 cup rice vinegar
1/2 cup Kikkoman Preservative-Free Non-GMO Toasted Sesame Oil

24 cups cooked chilled soba noodles
12 cups shredded poached chicken breast
12 cups mung bean sprouts
12 cups julienned red bell peppers
6 cups green onions, thinly cut on bias
1 1/2 cups chopped cilantro

directions

To make Soy Vinaigrette: Whisk together all ingredients until blended. (Yield: 3 cups)

For each serving, to order: Toss together 1 cup soba, 1/2 cup chicken, 1/2 cup sprouts, 1/2 cup peppers, 1/4 cup green onions and 2 tablespoons Soy Vinaigrette. Mound on serving plate; sprinkle with 1 tablespoon cilantro.
