Chef Andrew makes delicious fried portabella rings with sweet and spicy Thai Chili Ranch. You can find the Thai Chili Ranch recipe in his Sauce Hack video.
Start by removing the stems and gills of the portabella mushrooms and then roast the. Cut the portabella caps into rings by using circle cutters -push down all the way and twist the cutter to ensure that it cuts all the way through. Dip the rings in prepared Kikkoman Tempura Batter and then dredge them in Kikkoman Panko. (Tempura batter is an easy way to bread items without the traditional three-step method and helps to speed the process along.) Fry the portabella rings for a few minute in a deep fryer at 360 degrees until golden and crispy.
Remove portabella rings and place in a paper-towel lined stainless steel bowl to remove excess oil. Place rings in a to-go container and drizzle with Thai Chili Ranch (which contains Kikkoman Thai Style Chili Sauce, Kikkoman Sriracha Hot Chili Sauce, Kikkoman Lime Ponzu Sauce and Ranch Dressing). Thai Chili Ranch can also be served on the side as a tasty dip. Top the rings with minced scallions and finely grated parmesan cheese.
