200g Kikkoman Soy Sauce                       
200g Rice Wine Vinegar                       
200g White Wine                       
75g Almond Oil                       
75g Olive Oil                           
40g Yuzu Kosho                       
65g Brown Sugar                   
35g Scallion white, sliced                   
20g Garlic sliced                   
20g Ginger briunoise       

directions

  1. Sweat garlic and ginger.  After soft add scallion       
  2. Deglaze with White wine, reduce for 1 minute.       
  3. Remove from heat whisk in brown sugar, and remaining ingredients
