1. To make the filling: mix ground pork, Kikkoman Hoisin sauce, Kikkoman Soy Sauce, ginger, garlic, green onion and cilantro until combined. Refrigerate
2. To make the Hoisin Mayo: whisk mayonnaise and ½ cup hoisin until combined and transfer to squeeze bottle. ‘
3. Cook off the scallion pancakes on a griddle over medium low heat, flipping several times until golden and crispy.
4. Gently smash 1 portion of pork filling in a thin even layer across 1 side of the pancake covering as much as possible. Cook on a griddle on medium heat for approx. 4 minutes until pork is cooked throughout.
5. Toss cucumber and carrot with chili crisp.
6. Drizzle Hoisin mayo onto cooked smash taco and top with chili crisp seasoned veggies.
