For Pad Thai Sauce
2 tablespoons Kikkoman® Less Sodium Soy Sauce
1 tablespoon fresh lime juice
1 tablespoon tamarind paste (or 1 tablespoon lime juice)
1 ½ tablespoons cane sugar (or white sugar)
½ teaspoon garlic, minced

For Wrap
1 cup chicken, cooked and shredded
2 ounces rice noodles, cooked and chilled
2 large flour tortillas
2 leafy lettuce leaves
⅓ cup bean sprouts
¼ cup matchstick carrots
1 small handful fresh cilantro
2 tablespoons roasted peanuts

directions

  1. Combine ingredients for Pad Thai sauce in a small bowl and stir well. Add chicken and noodles and gently stir to coat. Set aside for 5 minutes to allow noodles to absorb the sauce.
  2. Place one tortilla on a clean work surface. Add 1 lettuce leaf towards the lower half of the tortilla and top with ½ of the chicken/rice noodle mixture. Add ½ of the bean sprouts, carrots, cilantro and peanuts.
  3. Fold the bottom up and fold in the sides. Roll the tortilla away from you snugly. Repeat with remaining tortilla. Slice wraps in half and enjoy.
