ingredients

1 cup unsalted butter
1 cup brown sugar
1 tablespoon Kikkoman® Soy Sauce
1 teaspoon vanilla extract
½ teaspoon baking soda
10 cups popped popcorn

directions

  1. Preheat oven to 250ºF and line a large baking sheet with parchment paper. In a medium saucepan, melt butter over medium heat, about 3 minutes. Stir in brown sugar. Bring to a low boil, stirring constantly for 5 minutes, until smooth and thoroughly mixed.
  2. Remove from heat and stir in soy sauce, vanilla extract, and baking soda.
  3. Slowly pour caramel over popcorn in a large bowl and stir gently to coat. Spread popcorn on baking sheets in a single layer.
  4. Bake for 30 minutes, stirring every 15 minutes. Remove from oven and cool completely at room temperature. Store in a dry spot in an airtight container.

THE STORY OF SOY SAUCE

Even people who love soy sauce and use it all the time are often surprised to learn what it is and how it’s made. We make ours from just four simple ingredients—water, soybeans, wheat, and salt. Those ingredients are transformed through a traditional brewing process—much like making wine or beer—that has remained unchanged for centuries.
