ingredients

For Mushroom Walnut Taco Meat: 
8 ounces halved white button mushrooms
2 cups raw shelled walnuts
2 tablespoons Kikkoman® Less Sodium Soy Sauce
1 tablespoon fresh lime juice
1 teaspoon ground cumin
½ teaspoon smoked paprika
½ teaspoon dried oregano
½ teaspoon garlic powder
¼ teaspoon cayenne pepper

For Tostadas:
8 tostada shells
1 ½ cups mashed avocado
1 cup chopped tomatoes
½ cup chopped red onion
¼ cup chopped cilantro
Lime wedges

directions

  1. Add mushrooms to a food processor and pulse a few times to break them up. Add walnuts, soy sauce, lime juice, cumin, smoked paprika, oregano, garlic powder and cayenne. Pulse until mixture is shredded, but walnuts are still visible.
  2. Transfer mushroom walnut mixture to a lightly greased skillet over medium heat. Cook for 5-7 minutes to heat through, stirring occasionally.
  3. Spread a couple tablespoons of mashed avocado on tostadas. Top with mushroom taco meat, tomato, red onion, cilantro and serve with fresh lime.
