- Stir together ingredients for sauce in a small bowl. Set aside.
- Heat 1 tablespoon of sesame oil in a large skillet over medium-high heat for 2 minutes. Add chicken breast and brown for 5 minutes. Turn chicken pieces and brown for 5 minutes longer. Set aside on a plate.
- Return pan to stove and add remaining tablespoon of sesame oil. Add bell peppers, snow peas and broccoli to the pan and cook for 4 minutes.
- Add cooked chicken breast, zucchini noodles and sauce to pan. Use tongs to toss and coat evenly. Cook 4 minutes, until zucchini noodles are just tender. Serve hot garnished with chopped peanuts and cilantro.
