kikkoman products used:

For Tzatziki Tartar Sauce
½ cup Greek yogurt
2 tablespoons mayonnaise
2 tablespoons grated cucumber
1 tablespoon chopped dill
¼ teaspoon salt

For Chips
½ pound golden potatoes, sliced into wedges
1 tablespoon olive oil
¼ teaspoon salt
⅛ teaspoon cracked black pepper

For Fish
1 pound cod fillets, cut into thick strips
¼ cup all-purpose flour
⅓ cup beer (Pilsner or IPA)
1 large egg
1 cup Kikkoman® Panko Bread Crumbs
½ teaspoon salt
¼ teaspoon cracked black pepper
⅛ teaspoon garlic powder
Lemon wedges for serving

  1. Stir together ingredients for tzatziki tartar sauce in a small bowl. Refrigerate until serving.
  2. In a medium mixing bowl, add potato wedges, olive oil, salt and pepper. Toss to coat. Place in basket of air fryer and fry at 400ºF for 8 minutes. Shake basket and air fry for 6-8 minutes longer. Place fries in a covered bowl to keep warm.
  3. Blot cod strips dry with a paper towel. In a shallow bowl, whisk together flour, beer and egg. In a second shallow bowl, whisk together panko, salt, pepper, and garlic powder.
  4. Working in 2 batches, first dip each cod strip in beer batter, allowing excess to drain back into bowl. Next, coat each strip in panko and place in the basket of air fryer. Air fry at 375ºF for 6 minutes. Turn cod and air fry for 4-6 minutes longer. Repeat with remaining cod strips.
  5. Serve fish and chips warm with tzatziki tartar sauce and lemon wedges.

Even people who love soy sauce and use it all the time are often surprised to learn what it is and how it’s made. We make ours from just four simple ingredients—water, soybeans, wheat, and salt. Those ingredients are transformed through a traditional brewing process—much like making wine or beer—that has remained unchanged for centuries.
