Penne Pasta with Soy Tomato Basil Sauce

ingredients

1/2 pound penne, rotini or bow-tie pasta
2 cloves garlic, minced
2 tablespoons olive oil
2 medium-size fresh tomatoes, chopped (about 2 cups)
1 medium zucchini, sliced (about 1-1/2 cups)
1 cup packed fresh basil leaves
2 tablespoons Kikkoman Soy Sauce
1/2 cup shredded fresh Parmesan cheese

directions

  1. Cook pasta according to package directions, omitting salt; drain and keep warm in large serving bowl.
  2. Meanwhile, sauté garlic in hot oil over medium heat 2 minutes. Stir in tomatoes; bring to boil. Cover and simmer 3 minutes. Add zucchini; cook 2 minutes longer, or until tender yet crisp. Stirring occasionally. Remove from heat; add basil and soy sauce, stirring until basil wilts.
  3. Pour over pasta; toss to combine. Sprinkle with cheese and serve immediately.
